SOUPS ON!!

I'm still not feeling that great today and my cough is pretty bad. It's been keeping me up all night. So, today I went to the Dr. Thankfully it's nothing that bad.

He just gave me some meds and told me to rest. If I'm not better by Monday I have to call him back to get some different meds.

I got a call from my trainer at Ballys today. Turns out he is sick too and wasn't going into work. I took that as a sign I should just stay home today and rest up.


I thought soup always makes you feel better so I did make a big pot of homemade vegetable soup.


I started out making the Weight Watchers 0 point soup but then added lots more veggies and even some white beans to add protein to it.


As I was cutting up the veggies and smelling the soup cooking, I felt like it was actually winter time.

I could hardly wait for the soup to be finished so I could have a nice bowl of it.


After eating all these healthy veggies I actually felt a little bit better. It was very good too.

In case you want to know how I made it I'll give you the recipe here.

Vegetable Soup with White Beans
2 carrots cut up
2 zucchini cut up
1/2 head of cabbage
1 bunch of fresh spinach, move stems
about 1 cup of cut up broccoli
1 small can of corn, can use fresh or frozen
1/2 onion
1 small can tomato paste
1 can white beans
2 garlic cloves or you can use garlic salt
1/4 tsp dried oregano
1/2 tsp dried basil
salt to taste
pepper to taste
1 box fat free broth (can use beef, chicken or vegetable)
2 Tlb. olive oil

In large pan add onion, garlic and carrots to heated olive oil. Saute over low heat until softened.

Add broth. Then fill up the box with water and add that to the pot. Add all other veggies and seasonings. Bring to a boil.
Reduce heat to low.

Simmer covered over low heat. Cook until veggies are tender.

I hope you fell better soon. Stay home from the gym if your sick,and keep warm. Thanks for sharing the soup recipe, I used to make it, but had forgotten about it. Wishing you well thoughts and hugs. Mumzie :)
PS: I gained those two pounds back I lost before Thanksgiving...:(
