BAKING CUPCAKES WITH GIRL SCOUT COOKIES

The past few weeks I've been very busy with Girl Scout Cookie sales. Since I'm a Girl Scout leader I am the one who orders the cookies, picks up the cookies, keep tract of the sale of the cookies, sets up and attends all cookie booth sales and anything else that has to do with cookies.

With all these cookies I thought it would be fun to try to make some cupcakes and use Girl Scout Cookies in the recipes.


I went to my girl friends house and we spent the day trying different cookies to make different kinds of cupcakes.

The first one we made was more like a mini cheese cake with cherries on top. The crust was a Shortbread cookie. These came out great!

To make these you will need:

2 8oz packages of softened cream cheese
1 cup sugar
1 1/2 tsp vanilla
2 eggs
12 Girl Scout Shortbread cookies
1 can cherry (or any other fruit) pie filling.


First line the pan with a cupcake liner. Then add a Girl Scout Shortbread cookie to each cup.

Mix all the other ingredients with a hand mixer. Spoon mixture over the Girl Scout Cookies. Bake for about 20 mins in a preheated 350 degrees oven.

When they first come out of the oven they will be puffy like a big muffin.

But then, as they cool, they sink down in the center. This is normal and what you want. Allow them to cool completely.

Then add the cherry (or other fruit) pie filling.

This will make 12 servings. Be sure to eat one quickly because before you know it they will all be gone! Everyone loves these.

The other cupcakes we made were Thin Mint cupcakes.

For this one, we just did a semi homemade cupcake.

We used a chocolate cake mix. Mixed as directed on the box. Then we crushed up Girl Scout Thin Mint Cookies and added it to the batter. We also added a little bit of Mint extract to the batter.

We cooked the cupcakes per the directions on the package.

We then iced them with a whipped cream type topping. It is called Pastry Pride.

To that we added a bit of the mint extract and then topped with crumbled Girl Scout Thin Mint cookies and added a whole Girl Scout Thin Mint cookie to the top.

It was fun trying different ideas to use the Girl Scout Cookies but it was more fun to eat what we made. YUM!

You should try these. I think you will like them too.

IT'S ALMOST TIME!!!

Soon, the yummy Girl Scout cookies will be back for sale.

Some places may already have them. Here in So. CA we don't get ours until Jan 30th. I can't wait. I love them!

I even buy enough to freeze some so I'll have them long after the Girl Scouts stop selling them. They freeze wonderfully.

I know Jan. is sometimes a bad time for many people because diet plans have just been put into place. Exercise promises are being kept. Cutting back on junk food and all sorts of New Year Resolutions have been made.

However, that does not keep you from being able to help out the Girl Scouts. You can either buy some and give them away to friends and family. Use them as hostess gifts, thank you gifts or get well gifts.

If you are just not able to even have them around for fear you may open them and eat the whole box, you have nothing to worry about. The Girl Scouts are also collecting boxes of cookies for our military men and women over seas.

That's right, you can purchase a box and leave it with the Troop and they will make sure your donation gets shipped over.

So, please, when you see the girls standing around outside of the stores. Or if one comes knocking on your door, please purchase a box or two.

Also, if you don't know of anyone selling cookies, I'm a leader so you can always contact me and I will make sure you either get your cookies or your donation is shipped off.

THEY'RE BAAAAAACK!

Girl Scout cookies that is. Yes, it's that time of year again when the little Brownies and Girl Scouts will be knocking on your door as they sell those boxes of cookies they are famous for.
Thin Mints! Yummy! I love to eat these frozen.

Tagalongs ~ a crispy cookie with a layer of peanut butter and then dipped in chocolate.

Trafoils ~ These are great with a cup of tea. They are a shortbread cookie.

Chocolate chip. Now who doesn't love a good chocolate chip cookie?

Samoa cookies are my favorite! They taste more like a candy bar to me then a cookie. Yummy cookie topped with caramel and coconut that is drizzled with chocolate. I could eat a whole box of these and not bat an eye.

Lemon Chalet Creams. If you like citrus flavor, you will love these.

Dulce de Leche ~ This one is new this year. It's full of rich caramel chips and drizzled with added caramel.

Do-si-dos ~ These are a crispy crunchy oatmeal cookie with a peanut butter filling.

I don't think it matters what kind of cookie you get. They are all good. But, the best part about them is the money goes to help fund trips and activities for the girls.

Girl Scouts is a wonderful place for girls to form friends, learn new things and have fun. All the while, staying safe and being taught high morals.

I hope when a little girl knocks at your door or you see a booth set up outside the stores near you, you will stop and get at least one box. Even if you don't want the cookies you can still buy one. Then donate the cookies back to the troop to resell and make additional money.

Trinity is a brownie so I of course will be buying my boxes from her. I'll allow myself one cookie a day and keep the rest in the freezer to enjoy in the months to come.
