CANDY CANE CUPCAKES

I know I have the 2nd part of the White House ornaments to show you but it takes so much time to do that post that I'm only about 1/2 way finished.

So, I thought I would show you the Candy Cane Cupcakes I'm going to be teaching Trinity's Brownie Troop tonight at their Christmas Party.

They are super easy to do and they taste super yummy too!

Just use whatever white cake recipe you like. You could even use a box mix if you like.

Just save a little bit out and add some red food color to it. Then swirl it into the white cake mix that you have already put into the cupcake liners.

Bake them up and you will have two tone cupcakes. Just like a candy cane.

I decided to flavor the icing with peppermint. Yum!

I actually used a whipped topping called Pastry Pride. For those of you that have not heard of that before it is found in the freezer section. I buy it at Smart and Final.

You thaw it out and then whip it up like you would whipped cream. It taste wonderful and the best part about it is you don't have to keep it in the refrigerator.

It's the same whipped topping that most resturants use for their whipped cream pies.

But you could use actual whipped cream if you don't mind keeping them cold. Also you could just add the peppermint to your buttercream icing.

To get the two tone effect you just paint on some red food coloring to your icing bag then add the icing to the bag.

When it comes out it will be red tipped with the white under the red.

Be careful though and don't use to much red. I did and to me it's got to much red in these. Tonight I won't use as much.

Though they don't look as deep red as they seem to be in the photos.

After they are iced just add some crushed up candy cane to the top and you now have your Candy Cane cupcakes.

They are also good with a chocolate cupcake. I made both in case some of the girls don't like white cake.

My neighbors were thrilled because I brought over my practice cupcakes to them to eat.
So there you have it. Simple and yummy. Enjoy.
