COOKIES AND MILK IN THE GARDEN

Today I was home alone. So, I thought I would throw on an apron and bake some yummy White Chocolate Macadamia Nut cookies.

These were very quick and easy to make. After I cleaned up and put everything away they were just calling my name. I had to have one or two. OK, I had three!

But, cookies just are not as good without a big cold glass of milk to go with them.

It was so pretty outside and there was a lovely breeze so I tossed on a lace table cloth and took the cookies outside.

I must tell you. It was very relaxing and calming out there. It was as if all my senses were being used.

I could see the pretty plants and flowers. I could hear the birds chirping. I could feel the cool breeze against my skin. I could smell the fresh baked cookies. Then of course, I could taste the flavors of the nuts, white chocolate and all the other wonderful things that went into the cookies.

The cold milk was the icing on the cake. Just perfect.

I thought I would post the recipe so you too can make these. I know school is getting ready to start and sending your little one with some homemade cookies is a great way of saying I love you.

Enjoy!

White Chocolate Macadamia Nut Cookies

1 1/4 cups flour

1/2 tsp. baking powder

1/4 tsp. salt

1/2 cup unsalted butter

1/2 cup brown sugar packed

1/4 cup sugar

1 egg

1 1/2 tsp. vanilla

3/4 cup white chocolate chips

1 cup lightly salted macadamia nuts chopped

PREHEAT OVEN to 375 degrees.

Mix, flour, baking soda and salt in bowl. Set aside.

Beat butter and both sugars until creamy. Mix in egg and vanilla until well combined. Add flour mixture. Do not over mix. Stir in white chocolate chips and nuts.

Drop dough by rounded tablespoon on parchment lined cookie sheet. Bake about 10 to 12 mins or until golden around the edges.

Remove from cookie sheet and cool on rack.

Makes about 30 cookies

Enjoy!

Joanne

  16. Hi Joanne!
Thanks for your prayers dear friend! Your are such a wonderful friend to me!! I hope you saved some of those scrumptious cookies for me, I'll be right over!

I'm so sorry that Gene is not seeming to be happy. I'm sure depression plays a huge part in the recovery processes. It's time to make new memories and happy times and leave the old times of the past behind. You girls need to try to come up with something different activities that might bring a spark to him. I am sure going to be praying for him and for God to give you ideas for future things he might be able to do. Maybe he needs to do slower paced things. A picnic just with you and Maureen. A walk on the beach or on a boardwalk or pier to sit & watch the ocean. Watching a good comedy on a dvd, maybe old sitcoms like I Love Lucy or some of her old movies. There's got to be something he might enjoy. Does he see a psychologist to deal with the depression and anger from the stroke? He probably does. I will be praying lots for him!

They wanted to do surgery for compressed vertebra in Mom's neck. It's something she has probably had for years but was detected in the many tests they did on her. She would probably be in a halo for 6-8 wks afterward. She would give up and die from something like that. She can live the rest of her life without the surgery so why put her through all that? We felt the doctors were looking for some easy money. We want her last time to be at least somewhat enjoyable. We had to fight with them to not do it. Then they didn't want to send her back to her own nursing home. We were so upset, it just wasn't pretty. And during all this I was really down with pain and couldn't go to Toledo so I had to do battle over the phone. But everything is better now. She's back in her "home", happy and content!
Love that tea party you went to! Next time I'll go with you! And I'll even wear a delicious hat!!

    Big Hugs, Sherry
